Dear Steve, 

DID YOU KNOW that B-vitamins and certain minerals are essential to the metabolism or breakdown of histamine, an inflammatory chemical secreted by mast cells synonymous with allergies and chronic inflammation?

Specifically, vitamins B1, B6, B5, B12 and folate, as well as magnesium, zinc and vitamin C are crucial for curbing overproduction of histamine.

The first step in controlling histamine is assuring a smooth functioning methylation pathway. If you are a poor methylator (a genetic test can tell you this), this could impede the breakdown of histamine and increase inflammatory symptoms.

Back to School Lunches

Back to school lunches don't have to be boring peanut butter and jelly sandwiches with chips. Even kids get excited when they are given colorful lunches with a lot of variety. Here are examples of out-of-the box lunches that are sure to please even the pickiest of eaters. Bon Appetit! 

SOUTH OF THE BORDER
- chicken burrito (cubed cooked cold chicken, black or white beans, shredded lettuce, shredded cheese, well drained salsa, and avocado spread folded into a soft flour, corn, or rice tortilla)
- celery/carrot/jicama sticks with small container of guacamole (Trader Joe's/Costco for dipping
- bunch of organic red grapes
- Hint berry flavored water

MEAT AND CHEESE ROLL-UPS
- 2-4 thin slices of nitrate-free deli turkey breast or ham
- 2 slices of Havarti or Lorraine Swiss cheese
Roll cheese around meat; then cut into rounds.
-black organic pitted black olives and baby carrots
- one serving of onion flavored Absolutely Gluten-free crackers
- melon balls or chunks (watermelon, cantaloupe, honeydew)
- Hint watermelon flavored water

MINI "TEA" SANDWICHES
- puréed cold cooked chicken or wild canned tuna made with dash of mayonnaise, pickle relish, and chopped celery and spread on sprouted or gluten-free bread rounds (crusts removed) - Bibb lettuce and cherry tomato slices, optional
- English cucumber coins and thinly cut red/orange pepper slices
- whole strawberries or banana coins with 6 oz. vanilla Greek or Skyr yogurt for dipping
- raspberry lemon Italian sparkling mineral water

VEGETARIAN ASIAN FLARE
- shelled chilled Edamame (sprinkle with salt or roasted sesame seeds)
- California rolls with small packet of San J tamari for dipping
- mango/Papaya chunks
- unsweetened fortified coconut milk

MEAT AND POTATOES
- cooked cold grassfed meatloaf or burger slices with dash of mustard or catsup
- dill pickle coins
- grain-free chips (potato/sweet potato/taro/batata/cassava/parsnip chips)
- apple/pear slices with sunflower seed butter for dipping
- lemon flavored Italian sparkling mineral water

MIDDLE EASTERN 
- pita stuffed with cooked ground beef, lamb, chicken, or chick peas with any desired vegetables
- tabouleh made with cold cooked bulgar or quinoa (pre-cooked organic frozen available at Trader Joe's/Whole Foods), parsley, chopped onion, and chopped tomato
- celery and jicama sticks with flavored hummus for dipping
- unsweetened vanilla flavored fortified almond/cashew milk
- mixed berries (raspberries/blackberries/blueberries)
